Lutz Lemonade
2 oz (60mL) Rye
1 oz (30mL) Lemon Juice
.5 oz (15mL) Maple Syrup
1 oz (30mL) Aquafaba or Egg White
1 Dash Orange Bitters
2 Sprigs Fresh Thyme
Dropper Saline
In a cocktail shaker, muddle Thyme, 1 Dash Orange Bitters , .5 oz Maple Syrup and 1 oz Lemon Juice together. Add into the shaker 2 oz Rye, 1 oz Aquafaba and Dropper of Saline. Add ice, a spring and more ice, cover and shake for 30 seconds. Strain into a chilled highball glass with a sphere. Garnish with more thyme clipped to the side.

Rye Whiskey

Bulleit Rye is made with a mash of 95% rye and 5% malted barley distilled, and aged in American White Oak barrels. The immediate flavor you will get from rye whiskey is it's punchy spice, vanilla extract bitterness and warming sensation. After you get passed the rye spice, woody and ceder notes come through and if you search hard enough, you will get freshly baked dough boy crescents.

Lemon Juice
5-6% acidity
Less acidic than lime juice, lemon juice will add enough acidity to brighten flavors without overpowering when balanced with sweetness. Usually our preference when needing acid to emulsify with egg white, aquafaba or cream.

Maple Syrup
A natural sweetener made from tree sap. Maple Syrup will bring out wood and straw notes in a spirit while adding sweetness stronger than simple syrup.

Aquafaba
An Egg White Substitute for cocktails. Aquafaba offers a silky texture that is slightly savory and can be aerated or shaken to create a cocktail foam.
To Make It:
1- 15 oz can Garbanzo Beans/Chickpeas 1
barspoon Cream of Tartar
Strain out the chickpeas using a fine mesh strainer. Pour chickpea brine in a clean and dry condiment bottle, add 1 tsp cream of tartar and stir gently to combine. Seal and store in the refrigerator for 2-3 weeks. * A note on using aquafaba for cocktails: Gently swirl prepared aquafaba before use to redistribute the settled cream of tartar; acid such as citrus juice will be necessary for frothing emulsion.

Bitters are made by concentrating flavors into an alcohol base. Orange bitters vary by brand, but are generally made with bitter orange peel, cardamom, caraway, coriander, anise and toasted sugar.

Fresh Thyme
Herbal, earthy, with a subtle mint note, fresh thyme can be quickly used in a cocktail by muddling and as an aromatic garnish on the side of a glass.

Salt/Saline
Salt/Saline is a great flavor booster. It can balance sweetness and bitterness, smoothing out a cocktail. It can also enhance citrus flavor and acidity without the need for more acid.
A pinch of salt can be added to the cocktail, but for consistency, saline is easy to make and allows more control.
To Make It:
2 oz (60mL) Distilled or Purified Water
1 Tbsp (15g) Fine Sea Salt
Combine in a jar and shake vigorously. Once salt is dissolved, pour into a dropper bottle.
